Chick pea Frittata with Avocado Salsa
Serves 2-3.

Ingredients:
½ tablespoon olive oil
½ medium onion, finely chopped
½ clove garlic, crushed
310g canned chick peas, drained
4 eggs, lightly beaten
1 tablespoon chopped coriander
½ tablespoon chopped fresh parsley

AVOCADO SALSA
½ medium avocado, chopped
½ medium Spanish onion, chopped
1 medium tomato, chopped
1 teaspoon chilli sauce

Method:

  1. Heat oil in a pan, add onion, garlic and cook stirring until onion is soft.
  2. Add the chick peas.
  3. Combine eggs, lightly beaten with the herbs and pour over the chick pea mixture.
  4. Cook for another 10 minutes or until the edges are set.
  5. Place the pan under the grill for 3 minutes or until the top is browned.

    Avocado Salsa:

  6. Combine all ingredients in a bowl and mix well.
  7. Turn frittata onto a plate and serve with avocado salsa.
