Chick pea Frittata with Avocado Salsa
Serves 2-3.
Ingredients:
½ tablespoon olive oil
½ medium onion, finely chopped
½ clove garlic, crushed
310g canned chick peas, drained
4 eggs, lightly beaten
1 tablespoon chopped coriander
½ tablespoon chopped fresh parsley
AVOCADO SALSA
½ medium avocado, chopped
½ medium Spanish onion, chopped
1 medium tomato, chopped
1 teaspoon chilli sauce
Method:
- Heat oil in a pan, add onion, garlic and cook stirring until onion is soft.
- Add the chick peas.
- Combine eggs, lightly beaten with the herbs and pour over the chick pea mixture.
- Cook for another 10 minutes or until the edges are set.
- Place the pan under the grill for 3 minutes or until the top is browned.
Avocado Salsa:
- Combine all ingredients in a bowl and mix well.
- Turn frittata onto a plate and serve with avocado salsa.
