Thai Chicken Vegie Stir-fry
Serves 2.

Ingredients:
100g lean chicken strips
¼ red sliced capsicum
¼ green sliced capsicum
1 sliced carrot
1 handful of green beans
1 chopped spring onions
1 handful of peanuts
½ chopped eggplant
1 handful mushrooms
1 Tablespoon chopped lemongrass
You can add some fresh chilli if you like a bit more spices

Method:

  1. Fry the chicken strips in a few drops of olive oil for 10 minutes
  2. Combine with the carrot, eggplant, capsicum, onion and beans and cook for 10 minutes
  3. Add the lemongrass, mushrooms and peanuts to the stir-fry and simmer for 2 minutes

    Serve with boiled rice and parsley for different combinations try different types of rices such as basmati, jasmine or wild rice. Or for more variation substitute the chicken with beef or lamb strips
