Serves 2.
Ingredients:
½ leek finely chopped
Large bunch of fresh spinach washed and chopped
4 eggs
2 medium spring onions finely chopped
2 Tablespoons of ricotta cheese
1 handful of sunflower seeds / pine nuts
Handful of mixed herbs such as parsley, basil or coriander.
Method:
- Place a few drops of extra virgin olive oil into a medium pan
- On a low heat fry the leeks and the spinach until soft (Approx. 5 minutes)
- Beat the eggs into a bowl
- Slowly add the cheese and spices to the bowl and continue mixing
- Then add the contents of the bowl to the cooked spinach in the fry pan
- Sprinkle the sunflower seeds on top and cover the fry pan with a lid until firm
- Garnish with a fresh garden salad and a slice of lemon
