Daal Soup
Serves 6.

Ingredients:
350g red or yellow lentils (wash well at least 5 times)
850mls water
4 chopped and crushed tomatoes
1 chopped green chill
30mls plain yoghurt
1 large chopped onion
Handful of chopped basil and Corriander
Sea salt and black pepper to taste

Method:

  1. Boil the lentils in 850mls water for 15 - 20 minutes or until soft and allow to cool slightly
  2. With a potato masher crush the lentils until a smooth consistency is reached
  3. Simmer for 2 minutes in a pan and add the tomatoes, onion, chilli and spices
  4. Allow to cool slightly and then slowly beat in the yoghurt and serve.

    Variation: instead of crushing the lentils you can leave them whole or add different types of beans or lentils.
