Fennel and Bean Soup Serves 4
Ingredients:
25g mixed dried beans
½ small onion chopped
40g chunk of lean meat chopped
45-50ml of vegetable or chicken stock
40g fresh spinach
1 bay leaf
Small head of fennel sliced thinly
Nutmeg
Pinch of saffron
Black pepper
Method:
- Soak the beans overnight in cold water.
- Drain and boil in 45mL of water.
- Skim off any foam from the surface.
- Add the onion, bay leaf, some nutmeg and black pepper.
- Add the meat and pour in the stock.
- Simmer over low heat for 40 minutes.
- Add the fennel and cook for another 10 minutes stirring well.
- Test if the beans are soft, then stir in the spinach and pinch of saffron.
- Remove the meat and serve hot.
Variation: If you prefer a vegetarian soup leave out the meat.
