Cauliflower, Ginger and Barley Soup
Serves 2-3.

Ingredients:
¼ cup (100g) pearl barley
1 tablespoon of cold pressed vegetable oil
½ medium chopped onion
1 cloves of crushed garlic
½ tablespoon of grated fresh ginger
½ teaspoon of tumeric
½ teaspoon of crushed coriander seeds
½ teaspoon of cumin seeds
½ medium grated and peeled apple
½ medium chopped carrot
3 cups of vegetable stock
½ small chopped cauliflower
¼ fresh chopped coriander

Method:

  1. Place barley in a bowel and cover with boiling water. Allow to stand for 1 hour then drain.
  2. In a large pan heat the oil and add the onion and garlic and cook until soft.
  3. Add the spices and seeds stirring whilst cooking.
  4. Add the barley, carrot and apple, cook for 2 minutes.
  5. Stir in the stock and simmer for 1 hour covered.
  6. Add the cauliflower and cook for another 10 minutes or until the cauliflower is tender.
  7. Stir in the coriander and serve.

    Variation: Add chopped, cooked chicken to soup with the coriander.
