Cauliflower, Ginger and Barley Soup
Serves 2-3.
Ingredients:
¼ cup (100g) pearl barley
1 tablespoon of cold pressed vegetable oil
½ medium chopped onion
1 cloves of crushed garlic
½ tablespoon of grated fresh ginger
½ teaspoon of tumeric
½ teaspoon of crushed coriander seeds
½ teaspoon of cumin seeds
½ medium grated and peeled apple
½ medium chopped carrot
3 cups of vegetable stock
½ small chopped cauliflower
¼ fresh chopped coriander
Method:
- Place barley in a bowel and cover with boiling water. Allow to stand for 1 hour then drain.
- In a large pan heat the oil and add the onion and garlic and cook until soft.
- Add the spices and seeds stirring whilst cooking.
- Add the barley, carrot and apple, cook for 2 minutes.
- Stir in the stock and simmer for 1 hour covered.
- Add the cauliflower and cook for another 10 minutes or until the cauliflower is tender.
- Stir in the coriander and serve.
Variation: Add chopped, cooked chicken to soup with the coriander.
