Spicy Fruit and Nut Barley Salad
Serves 1-2.

Ingredients:
½ cup pearl barley
15mL olive oil
¼ large onion, finely chopped
¼ tablespoon grated lemon rind
½ teaspoon grated fresh ginger
½ teaspoon cardamom seeds
½ teaspoon turmeric
½ teaspoon ground cumin
¼ cup shelled pistachios
10g roasted buckwheat
8g toasted sesame seeds
10g pepitas
30g chopped pitted dates
35g chopped dried figs
1 pear half chopped
1 celery stick, chopped finely
30mL lemon juice
45mL low-fat mayonnaise

Method:

  1. Boil barley in a large pan for 40 minutes or until tender.
  2. Drain.
  3. Heat oil in a pan, add onion, lemon rind, ginger and spices.
  4. Cook until onion is soft.
  5. Combine barley, onion mixture and remaining ingredients in a bowl. Mix well and serve.
