Serves 2.
Ingredients:
1 teaspoon cold presses vegetable oil
1 ½ teaspoons tomato puree
400g tin tomatoes
½ teaspoon dried garlic
½ teaspoon black pepper
1 teaspoon dried basil
Fresh parsley washed and chopped
225g chickpeas (dried or tinned)
75g pine nuts
Method:
- In a saucepan heat the oil and add the tomato puree stirring over low heat.
- Add the tinned tomatoes and mash. Add garlic, pepper and basil and stir in.
- Simmer for 10 minutes then add the chopped parsley.
- In a bowl combine drained chickpeas and pine nuts. Pour the sauce over the top and mix well.
- Serve warm or cold.
