Serves 1.
Ingredients:
¼ red capsicum
7 medium pealed prawns
1 small onion cut into quarters
¼ green capsicum
4 mushrooms cut in half
¼ small eggplant cut into large cubes
4 kebab sticks
Method:
- Combine all ingredients evenly onto the kebab sticks
- Grill on the BBQ for 10 minutes or until brown
- Serve with a medium barbecued corn on the cob or a fresh garden salad
- For a variation use chicken, lamb or beef instead of the prawns and use different veggies
