Grilled Prawn & Vegetable Kebab
Serves 1.

Ingredients:
¼ red capsicum
7 medium pealed prawns
1 small onion cut into quarters
¼ green capsicum
4 mushrooms cut in half
¼ small eggplant cut into large cubes
4 kebab sticks

Method:

  1. Combine all ingredients evenly onto the kebab sticks
  2. Grill on the BBQ for 10 minutes or until brown
  3. Serve with a medium barbecued corn on the cob or a fresh garden salad
  4. For a variation use chicken, lamb or beef instead of the prawns and use different veggies
