Stuffed Beef Peppers
Serves 4.
Ingredients:
4 large peppers / capsicum (choose assorted colours)
1 red spanish onion
100g lean beef
½ can chopped tomatoes
Handful of chopped mushrooms
1 zucchini
1 finely chopped carrot
Method:
- Fry the lean beef in fry pan with oil for 20 minutes or until cooked
- Fry the onions, zucchini and carrots for 10 minutes, then add the mushrooms
- Combine all of the ingredients into one bowl and allow to cool
- Slice the peppers in half leaving the stems but removing the seeds
- Boil the peppers in hot water for 3 minutes and allow to drain
- Start filling the peppers with the beef and vegetables until level
- Place in a oven poof dish, cover with foil and bake for 15 minutes
- Then uncover the dish and bake for a further 2 minutes until golden brown
- Serve with a fresh garden salad and a small portion of brown rice with herbs and spices
