Stuffed Beef Peppers
Serves 4.

Ingredients:
4 large peppers / capsicum (choose assorted colours)
1 red spanish onion
100g lean beef
½ can chopped tomatoes
Handful of chopped mushrooms
1 zucchini
1 finely chopped carrot

Method:

  1. Fry the lean beef in fry pan with oil for 20 minutes or until cooked
  2. Fry the onions, zucchini and carrots for 10 minutes, then add the mushrooms
  3. Combine all of the ingredients into one bowl and allow to cool
  4. Slice the peppers in half leaving the stems but removing the seeds
  5. Boil the peppers in hot water for 3 minutes and allow to drain
  6. Start filling the peppers with the beef and vegetables until level
  7. Place in a oven poof dish, cover with foil and bake for 15 minutes
  8. Then uncover the dish and bake for a further 2 minutes until golden brown
  9. Serve with a fresh garden salad and a small portion of brown rice with herbs and spices
