Grilled Chicken with Mint Yoghurt Sauce
Serves 6.
Ingredients:
6 chicken breast fillets (no skin)
250g traditional yoghurt
3 cloves of garlic
1 Teaspoon freshly grated ginger
2 fresh lemons
1 handful of freshly chopped mint
Method:
- Grill the chicken fillets for about 15 minutes on either side until brown and cooked right through
- While that's cooking combine the yoghurt with the garlic, ginger, mint and lemon juice
- Top the cooked chicken with the mint sauce and garnish with a fresh salad, slice of lemon and a small portion of boiled brown rice.
As a variation try marinating the fillets in the mint sauce overnight for more flavor
