Grilled Chicken with Mint Yoghurt Sauce
Serves 6.

Ingredients:
6 chicken breast fillets (no skin)
250g traditional yoghurt
3 cloves of garlic
1 Teaspoon freshly grated ginger
2 fresh lemons
1 handful of freshly chopped mint

Method:

  1. Grill the chicken fillets for about 15 minutes on either side until brown and cooked right through
  2. While that's cooking combine the yoghurt with the garlic, ginger, mint and lemon juice
  3. Top the cooked chicken with the mint sauce and garnish with a fresh salad, slice of lemon and a small portion of boiled brown rice.

    As a variation try marinating the fillets in the mint sauce overnight for more flavor
