Cucumber, Mint and Dill Relish

Ingredients:
2 cucumbers
1 teaspoon sea salt
100ml olive oil
1 clove garlic
1 red chilli
1 teaspoon soy sauce
25g raw sugar
5ml capers
15ml apple cider vinegar
Fresh mint
Fresh dill
½ bunch of spring onions

Method:

  1. Grate cucumbers and place in a sieve. Sprinkle with sea salt and leave to drain for 20 minutes to remove the excess water.
  2. In a pan warm the walnut and chilli oil with the crushed garlic and de-seeded chopped chilli. Stir for a few minutes.
  3. Add the soya sauce, sugar, vinegar, chopped capers and spring onions to the pan with 2 teaspoons each of mint and dill.
  4. Squeeze the cucumber to remove any excess water and add to the pan. Bring to simmering point and increase heat to cook for 2-3 minutes more.
  5. Remove from heat and spread in a baking tray as thinly as possible to cool down.
  6. Store in a jar and refrigerate.

    Serving Suggestion: Served with fish, salmon, chicken or salads
