Grilled Turkey Couscous
Serves 2.
Ingredients:
2 turkey or chicken breast fillets (no skin)
1 clove crushed garlic
1 medium onion thinly sliced
2 Tablespoons chopped parsley
2 Tablespoons chopped basil
½ green sliced capsicum
½ red sliced capsicum
½ can chopped tomatoes
1 medium sliced zucchini
1 cup couscous (can use rice instead)
Method:
- Place the turkey fillets under the grill to bake for about ½ hour
- Fry the onion and garlic in a bit of olive oil for 2 minutes
- Prepare the zucchini, capsicums, and herbs and add them to the onion and garlic in the pan, and fry until golden brown
- Add the tomatoes and allow to simmer on low heat for 2 minutes
- Add 1 cup of couscous to 2 cups of boiling water and allow to boil for 2 minutes
- Thinly line the plate with couscous, add the turkey and garnish with the vegetable salsa.
