Grilled Turkey Couscous
Serves 2.

Ingredients:
2 turkey or chicken breast fillets (no skin)
1 clove crushed garlic
1 medium onion thinly sliced
2 Tablespoons chopped parsley
2 Tablespoons chopped basil
½ green sliced capsicum
½ red sliced capsicum
½ can chopped tomatoes
1 medium sliced zucchini
1 cup couscous (can use rice instead)

Method:

  1. Place the turkey fillets under the grill to bake for about ½ hour
  2. Fry the onion and garlic in a bit of olive oil for 2 minutes
  3. Prepare the zucchini, capsicums, and herbs and add them to the onion and garlic in the pan, and fry until golden brown
  4. Add the tomatoes and allow to simmer on low heat for 2 minutes
  5. Add 1 cup of couscous to 2 cups of boiling water and allow to boil for 2 minutes
  6. Thinly line the plate with couscous, add the turkey and garnish with the vegetable salsa.
