Caribbean Chicken
Serves 2.
Ingredients:
2 medium chicken breast fillets (no skin)
2 shallots finely sliced
1 fresh green chili (optional)
1 clove of crushed garlic
1 can of chopped tomatoes
1 small onion finely chopped
½ green capsicum finely chopped
3 fresh basil leaves finely chopped
Method:
- Grill or bake the chicken fillets for about ½ hour or until cooked right through
- In a fry pan combine the tomatoes, garlic and onion and allow to simmer for 5 minutes
- Combine the capsicum, basil and chili to the pan and simmer for another 5 minutes
- Once the fillets are complete top with the tomato salsa.
Serve with a small portion of rice, 1 potato or a handful of boiled vegetables for variation
