Vegetable Wraps
Serves 1.
Ingredients:
large whole wheat or corn tortilla
3 tbsp low fat hummus
2 lettuce leaves
1/2 cup favorite raw veggies ie
tomatos, carrots, zucchini
A sprinkle of your favorite herbs to
taste i.e. fresh mint, parsley,
rosemary. 1/4 tsp sea salt
2 tsp of Massel vegetable stock
Method:
- On one side of a tortilla, spead
hummus. Layer with lettuce leaves,
add vegetables.
- Tightly roll up tortilla. Cut in
half. Wrap each half in plastic wrap
and chill up to 6 hours. Makes 2
snack servings.
