Vegetable Stuffed Mushrooms
Serves 4.

Ingredients:
24 large or 12 extra-large
mushrooms, stems removed
2 tsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 carrot, finely chopped
1 red capsicum, finely chopped
1/2 cup Massel chicken broth
1/2 tsp dried oregano
3 tbsp low fat cheese
2 tbsp chopped fresh parsley

Method:

  1. Place a few drops of extra virgin olive oil into a medium pan
  2. On a low heat fry the leeks and the spinach until soft (approx. 5 minutes)
  3. Beat the eggs into a bowl
  4. Slowly add the cheese and spices to the bowl and continue mixing
  5. Then add the contents of the bowl to the cooked spinach in the fry pan
  6. Sprinkle the sunflower seeds on top and cover the fry pan with a lid until firm
  7. Garnish with a fresh garden salad and a slice of lemon
