Serves 4.
Ingredients:
24 large or 12 extra-large
mushrooms, stems removed
2 tsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 carrot, finely chopped
1 red capsicum, finely chopped
1/2 cup Massel chicken broth
1/2 tsp dried oregano
3 tbsp low fat cheese
2 tbsp chopped fresh parsley
Method:
- Place a few drops of extra virgin
olive oil into a medium pan
- On a low heat fry the leeks and
the spinach until soft (approx. 5
minutes)
- Beat the eggs into a bowl
- Slowly add the cheese and spices
to the bowl and continue mixing
- Then add the contents of the
bowl to the cooked spinach in the fry
pan
- Sprinkle the sunflower seeds on
top and cover the fry pan with a lid
until firm
- Garnish with a fresh garden
salad and a slice of lemon
