Lean Beef Fajitas
Serves 4.
Ingredients:
2 tbsp extra virgin olive oil
Juice and zest from 2 limes
2 limes, cut into eighths
1 lemon
1 tsp jalapeņo pepper, minced
2 cloves garlic, minced
340 gms lean steak, cut across the
grain into 1-inch cubes
2 red onions, cut into eighths
3 capsicums, various colors, cut into
eighths
6-inch whole meal or corn tortillas
Method:
- Whisk the olive oil, lime juice
and zest, lemon, pepper, and garlic
together. Pour over the beef and
vegetables in a large bowl and toss
to coat.
- Thread the beef and vegetables
onto metal skewers and grill over
medium-high heat, allowing fat to
drain away. Continue to brush the
marinade over the skewers as they
cook, approximately 3-4 minutes per
side.
- Heat tortillas up and slide
vegetable and beef off the skewers
onto the tortillas. Wrap bottom of the
tortilla up and fold over insides. Serve
