Banana pancakes
Makes 12.

Ingredients:
1 cup wholemeal flour
1/2 cup brown rice flour
1 tsp baking powder
1/2 tsp baking soda
2 tbsp of raw sugar
2 cups of low fat yogurt
1 cup water
1 egg white
1 banana, coarsely chopped
Dash of nutmeg

Method:

  1. Combine all the dry ingredients.
  2. Beat egg white until frothy and whisk in the yogurt and water.
  3. Combine wet and dry ingredients, mixing only until moistened, adding a bit more water if necessary. Fold in the banana pieces.
  4. Bake on a non-stick pan at about 190ºC, turning only once...
