Detox Recipes
Vegetarian Bolonaise
Ingredients:
1 medium eggplant diced
1 carrot grated
6-8 mushrooms chopped
1 onion diced
5 tomatoes
1/2 tsp basil
1/2 tsp oregano
1/2 tsp parsley
1/2 Massel vegetable stock cube
1 tbsp oil
Method:
- Saute eggplant, mushrooms and onion in oil until soft. Add carrot and water, simmer for 10 mins.
- Add tomatoes, tomato paste, veg stock cube and herbs. Break up tomatoes, bring to boil then simmer for 20 mins until cooked. Enjoy with your wholemeal pasta.
