Detox Recipes

Vegetarian Bolonaise
Ingredients:
1 medium eggplant diced
1 carrot grated
6-8 mushrooms chopped
1 onion diced
5 tomatoes
1/2 tsp basil
1/2 tsp oregano
1/2 tsp parsley
1/2 Massel vegetable stock cube
1 tbsp oil

Method:

  1. Saute eggplant, mushrooms and onion in oil until soft. Add carrot and water, simmer for 10 mins.
  2. Add tomatoes, tomato paste, veg stock cube and herbs. Break up tomatoes, bring to boil then simmer for 20 mins until cooked. Enjoy with your wholemeal pasta.
