Serves 4.
Ingredients:
500 grams chopped bream
1/2 cup wholemeal breadcrumbs
1/2 cup ground walnuts
3/4 cup water
1 cup minced onion
1/4 cup sliced olives
1 tsp lemon rind & 1 tbs grated ginger
1/2 cup chopped parsley & 1/2 tsp basil
1 tsp prepared mustard
2 tbs oil & 2 tbs miso
Teriyaki Sauce
1 cup miso
2 tsp grated ginger root
2 cloves garlic 1 tsp roasted sesame oil
1 tbs barley malt
Method:
Fish
- Combine all the ingredients and blend
until creamy.
- Preheat oven to 190°C.
- Oil 15cm by 12cm by 5cm loaf pan,
smooth into pan and cover and bake
for 15 mins.
- Remove cover and bake until set and
lightly browned.
- Remove from oven and cool before
slicing.
Sauce
- Blend first 4 ingredients together.
- Place in saucepan and simmer 10 mins.
- Add barley malt and cook 5 minutes
longer.
- Spoon over cut slices of fish
