Detox Recipes

Sweet And Sour Snapper
Serves 4-6.

Ingredients:
1 kg whole snapper
2 stalks shallots and 2 slices ginger root
1 tbsp salt-free vegie seasoning
2 tbsp shredded ginger root
2 tbsp shredded spring onion
1 tbsp shredded red hot pepper
2 tbsp shredded green pepper
1 tbsp cold pressed extra virgin olive oil
10-15 cups purified water
4 tbs roasted sesame oil
4 tbsp cold pressed extra virgin olive oil
6 tbsp brown rice vinegar
6 tbsp barley malt
1 tsp mustard powder
1/2 tsp arrowroot flour
1-2 tbs purified
water and 2-3 sprigs coriander

Method:

  1. Rinse fish.
  2. Rub the fish with the first four ingredients inside and out. Let stand 20minutes.
  3. Meanwhile, shred all the vegetables.
  4. Drain off fish, combine in the pot oil and water. When it reaches boiling point, place whole fish in. (Water should cover fish)
  5. Cover and when the water boils again, turn off heat. Let sit covered 15 minutes.
  6. Remove fish to a serving platter.
  7. Heat the roasted sesame oil and spoon over the fish.
  8. Heat the wok, add the other oil and stir fry vegetables.
  9. Add the next 3 ingredients and cook until the mixture boils.
  10. Dissolve the arrowroot in water, stir in wok and mix till thick and clear.
  11. Pour sauce over fish and garnish with coriander.
